We are thrilled to showcase our second participation at Global News’ “Saturday Sips”, this time focusing on EVOO and food pairings.

Olive oil pairings work well through two main approaches: 1) pair by concordance: delicate oils complement lighter dishes (Arbequina oil is great for a seafood salad, whereas an intense Intosso pairs well with a medium rare steak ) 2)pair by opposition, where an intense, spicy oil like Corarina can elevate the flavors of milder dishes like creamy cheeses.
Also, when you can, pair local dishes with local oils like a nice Coratina with burrata, both from the Puglia region.
Our pairings featured were the following:
1)Crostini Tuna and Pistacchio Pesto with Intosso Masciantonio. Here the green notes of the pesto and the Intosso go hand in hand nicely.
2)Crostini Mozzarella di Bufala and cherry tomatoes with Posta Locone (Coratina cultivar) Fratelli Ferrara. The bitter almond and spicy notes of Coratina add lots of flavour to the cheese.
3)Hummus Crostini with Koreneiki Acropolis (Creete, Greece). The fruitiness of this Greek oil matches nicely the nuttiness of the hummus.
